Audace

Audace, short for Audacity, serves as an invitation to discover French Bistro fare with a contemporary touch. The restaurant is the brain-child of acclaimed chef, Jérémy Gillon, from one-starred Le Montana in the French Alps.

Central to the concept is how Jérémy hopes for diner to experience his dishes through new eyes. Our inspiration is beautifully summarised by a quote from Marcel Proust, “The real voyage of discovery consists not seeking new landscapes, but in having new eyes.”

The contemporary french bistro took on the personality of Jeremy, possessing a quiet confidence that is approachable and modern.

Based on the restaurant’s concept and centerpiece, we developed a geometrical eye as a graphic device that is curious and memorable.

A major allure is the restaurant’s work with exotic wild herbs. Foraged and flown in directly from the French Alps, Jeremy employs a variety of techniques to coax out the flavours, combining them with fresh produce from the nearby Tekka Market.

The illustrations are used in seasonal menus and various invites.

The herbs are also used extensively in bespoke cocktails created by the resident mixologist at Audace’s bar. The illustrated coasters provided the colourful cocktails with a stark contrast.
